Sorbic acid is a novel , highly efficient ,safe and nonpoisonous
food preservative recognized internationally as a best one.It is the substitute for the benzoic acid as a traditional preservative. Because its solubility in water is l ower , adding a small quantity of alcohol or sodium bicarbonate to the solution is adopted. If necessary, heating the sorbic acid solution is also permitted. Sorbic acid has obvious inhibitive effect for mould, yeast and aerobion. Being an acidic preservative it is better to use under PH5 ~6.The molecules of sorbic acid can combine with hydrosulfide group of microbiological's enzymatic system to destroy its activity. Sorbic acid is an unsaturated fatty acid which participates in the normal fat metabolism in human body and will be oxidated into carbon dioxide and water finally. It will not be accumulated in human body . Besides the role of the food preservative , sorbic acid is also widely applied in the industries of medicine ,daily cosmetics, paper making ,feed additive and tobacco etc. |
